Ingredients:

  • 2 tbsp of olive oil
  • 1 onion (square cut)
  • Bell peppers (cut)
  • ½ cup of corn
  • 1 tsp of cumin
  • 1 tsp of oregano
  • 2 tbsp of black beans (boiled)
  • 3 eggs

Directions:

First of all heat the olive oil on medium heat and the gradually add onion, bell peppers, corn, garlic and oregano. Cook until the onion is light brown and then add the black beans, chilies (optional), salt and then keep stirring. Now add the eggs gradually crack them and cook until the whites are set. If you don’t like this way then boil the eggs and add them. After this step the dish is ready to be served.
